"C" is for carrot

 This week Joseph's curriculum focused on the letter "C".  SO Thursday we washed carrots, shredded them, and baked them.  Joseph just LOVED to wash them...which kept him busy for a little while.  Next week is the letter "D" so I'll have to find something else for him to wash.

 The kids obviously loved the muffins because they were all gone by Friday afternoon.  I didn't have but 1 egg at the time so we had to half the recipe.  BUT tonight I shredded some more carrots and baked us a fresh batch.  The recipe is carrot banana bread and I will say it is VERY good!!!!
